These muffins are as easy to make as a peanut butter and jam sandwich.

2 cups all-purpose flour
1 ½ teaspoons salt
1 tablespoon baking powder
1 cup milk
2 large eggs
⅔ cup sugar
1 cup creamy peanut butter
⅓ cup vegetable oil
½ cup Plum + Rose Jam
¼ cup sugar (optional)
1. Preheat oven to 375 degrees. Spray muffin pan with non-stick cooking spray.
2. Stir together flour, salt and baking powder. Add in milk, eggs ⅔ cup sugar, peanut butter and oil; mix to combine on low speed (do not over beat).
3. Fill muffin tin with half of batter, place 2 teaspoons of jam in the center of each muffin and divide the remaining batter between the muffin cups. Sprinkle with ¼ cup sugar (optional). Bake for 18-20 minutes.
