Bacon Jam Cinnamon Rolls

Makes 12
For the filling:
½ cup salted butter, almost melted
1 cup packed brown sugar
2 tablespoons cinnamon
3 tablespoons Cranberry Raspberry Sage Jam
½ cup heavy cream
For the frosting:
6 oz cream cheese, softened
⅓ cup salted butter, softened
2 cups powdered sugar
½ tablespoons vanilla extract
For the dough:
1 cup warm milk
1 packet instant yeast
2 large eggs
⅓ cup salted butter, melted
4 ½ cups all-purpose flour
1 teaspoon salt
½ cup granulated sugar
garnish: 4 slices of bacon
For the filling:
1. Combine the softened butter, brown sugar, cinnamon and jam. Mix until well combined.
For the frosting:
1. Combine the softened cream cheese and butter. Add in vanilla and powdered sugar; beat until combined. Spread the frosting over the cooled rolls.
For the dough:
1. Pour warm milk into mixer bowl and sprinkle yeast on top. Add eggs, butter, salt and sugar; mix to combine.
2. Add in 4 cups (save the ½) of flour and mix until just combined. Let the mixture rest for 5 minutes. Scrape dough from mixer blade, remove and replace with the dough hook. Knead the dough in mixer on medium speed for about 5 minutes; until the dough is elastic and smooth. Add the additional ½ cup flour if needed to form the dough (the dough should still be tacky and stick to the side of the bowl).
3. Spray a large bowl with cooking spray, place dough in bowl and cover with a towel. Set the bowl in a warm place and let the dough rise until it doubles in size.
4. Sprinkle a clean surface with flour, place dough on surface and sprinkle the top of the dough with flour. Flour a rolling pin and roll dough to approximately 24”x15” rectangle. Spread the filling over the whole dough rectangle and roll tightly starting with the long end of the dough.
5. Cut into 12 pieces and place into a greased 9x13 baking pan. Cover with a towel and allow to rise for 20 minutes.
6. Preheat the oven to 375 degrees. Warm the heavy cream and once the rolls have risen, pour the heavy cream over the top of the rolls. Bake at 375 degrees for 20-22 minutes until the rolls are lightly golden brown.
7. Cook bacon until crisp. Rough chop and garnish rolls.
