Baked Raspberry Breakfast Cheesecake
You can have your cheesecake for breakfast and eat it too.

2/3 cup low fat cottage cheese
1/8 cup plain Greek nonfat yogurt
1 egg
1/8 cup vanilla protein powder
1-2 tbs. sugar
Fresh raspberries
2 tbsp. Strawberry Raspberry Tarragon Jam
1. Blend all ingredients (except raspberries and jam) together until smooth.
2. Pour into a ramekin and top with fresh raspberries. Bake for 20-25 mins at 320 degrees F until lightly golden and firm around the edges (will be a bit wobbly in the middle).
3. Refrigerate for a few hours or overnight to set.
4. When ready to serve, top the cheesecake with raspberry jam.
