Black Velvet Mezcal
Smooth red wine combined with the smokiness of mezcal and our Peach Jam. This isn't your regular Black Velvet. It's a dream.

Makes 1
1.5 oz. Gem + Bolt Mezcal
0.75 oz. red wine syrup
0.75 oz. lemon juice
1 bar spoon of Smoked Yellow Peach Jam
Garnish: Dried peach
For the red wine syrup:
½ cup dry red wine
½ cup sugar
1. Combine all liquid ingredients and peach jam with ice in a shaker.
2. Shake, strain, and then serve in a rocks glass.
3. Garnish with a dried peach, if desired.
For the red wine syrup:
In a small saucepan, combine the wine and sugar and simmer over moderate heat, stirring, until the sugar has dissolved. Remove from the heat and let cool. If made ahead, the syrup can be refrigerated for up to 2 weeks.
