Cranberry Raspberry Bars
You could pretty much use any jam here, like Blueberry Lemon Basil or Chinese 5 Spiced Apple Butter. Trust us on this one.
Makes 12-18
1 jar Cranberry Raspberry Sage Jam
3 c. oats
3 c. flour
2 c. brown sugar
1 tsp. baking powder
1 1/2 c. melted butter
1/2 tsp. salt
1. Preheat oven to 350º.
2. Mix oats, flour, sugar, baking powder, butter and salt together. Press 2/3 of the crumble mixture into the bottom of a 9x13” pan lined with parchment.
3. Bake crust for 10 minutes.
4. Add jam to crust and spread evenly. Top with remaining oat mixture and bake for 25-30 minutes.
5. Remove bars from oven. Eat immediately served with vanilla ice cream (like a fruit crisp!) or chill for a few hours in order to let the bars set up.
*Note: If using a jam with a thinner consistency, cook with a couple tablespoons of cornstarch over medium heat for 10 minutes to thicken.
