Peanut + Jam Curry Braised Ribs
Why should the unstoppable combination of peanut butter and jam be limited to bread? These sticky ribs have a ton of peanut flavor and a hint of sweetness - thanks to our Strawberry Chipotle + Fig Jam!

1 slab (about 4 lb. slab) pork ribs
2 tsp. onion powder
1 tbsp. garlic powder
1 tbsp. ginger
2 tsp. ground coriander
1 tsp. cinnamon
1 tsp. red pepper flakes, optional
Salt and pepper, to taste
1 1/2 tsp. curry powder
1/4 cup brown sugar
1/2 cup peanut butter
3 tbsp. soy sauce
1/2 cup water
1/2 cup Strawberry Chipotle + Fig Jam
Pinch of red pepper flakes
1. Preheat oven to 275 degrees F.
2. Remove the membrane from the back of the ribs. Combine onion powder, garlic powder, ground ginger, ground coriander, ground cinnamon, and red pepper flakes in a small bowl and mix together. Season the ribs with salt and pepper then coat both sides in seasoning blend.
3. Line a baking sheet with aluminum foil. Place ribs on the baking sheet and drizzle olive oil on top. Cover with aluminum foil and bake for 3 hours.
4. While ribs are cooking, grab a small sauce pan. Over medium low heat, add curry powder, brown sugar, peanut butter, soy sauce, water and red pepper flakes. Whisk constantly until sauce reduces and thickens, about 5-7 minutes.
5. Cut up ribs and alternately brush with peanut sauce and jam. Broil in the oven for 2-3 minutes.
