Raspberry Hot Sauce Brownies

Serves 10

 

1/3 cup cocoa powder
1 tsp. instant coffee espresso powder
1 1/4 cup boiling water
2 oz. unsweetened chocolate, finely chopped
6 oz. 60% cacao dark chocolate chips
1/2 cup butter (1 stick), melted
1/2 cup vegetable oil
2 large eggs
2 large egg yolks
2 tsp. vanilla extract
2 1/2 cups sugar
1 3/4 cup flour
1 tsp. salt
4 tbsp. Raspberry Hot Sauce

For the glaze:
4 oz. semi-sweet chocolate baking bar
2 tsp. Raspberry Hot Sauce
Garnish: fresh raspberries

1. Pre-heat oven to 350°F.

2. Whisk together cocoa powder, instant coffee, and boiling water together in large bowl until smooth.

3. Add unsweetened chocolate and chocolate chips; whisk until chocolate is mostly melted.

4. Whisk in melted butter and oil. Add eggs, egg yolks, and vanilla; continue to whisk until smooth.

5. Whisk or stir in sugar until fully incorporated.

6. Add the Raspberry Hot Sauce.

7. Add flour and salt; stir until combined.

8. Scrape batter into 9×13 pan that has been sprayed with cooking spray. Bake until toothpick inserted halfway between edge and center comes out with just a few moist crumbs attached, 30 to 35 minutes.

9. Transfer pan to wire rack and cool 1 1/2 hours. 

10. In the meantime, melt chocolate baking bar. Stir Raspberry Hot Sauce into melted chocolate. Drizzle chocolate hot sauce over cooled brownies and garnish with fresh raspberries, if desired.

11. Cut, serve, and enjoy.
