Seared Scallop Salad w/ Strawberry Chipotle + Fig Jam

This seared scallop recipe is easy to make with an unexpected topping. Serve with mixed greens for a healthy, delicious lunch or dinner.

Serves 2


For the salad:
Mixed greens
Beets
Roasted corn
Fresh Cojita cheese (or feta or goat cheese)

For the champagne vinaigrette:
2 tbsp. extra virgin olive oil
2 tbsp. champagne vinegar
1 tsp. Dijon mustard
Zest of 1 lemon
Fresh ground pepper

For the scallops:
Scallops
Salt
Black pepper
Avocado oil
Strawberry Chipotle + Fig Jam

1. Whisk olive oil, champagne vinegar, dijon mustard, lemon zest and fresh ground pepper to taste.

2. Toss mixed greens with vinaigrette.

3. Top salad with beets, roasted corn and cheese.

4. Season scallops with salt and black pepper. Sear on a medium hot skillet with avocado oil for 2-3 minutes per side. Top each scallop with Strawberry Chipotle + Fig Jam.
