Somali Pancakes w/ Plum + Rose Sauce
One taste of these and you'll never look at pancakes the same.
Recipe adapted from A Sweet Point of View
Serves 12
For the pancakes:
11 oz. all-purpose flour
6 oz. plant-based milk
1 large egg
1/4 tbsp. cinnamon
1 pinch salt
1 tbsp. sunflower oil
85 g sugar
For the sauce:
10 1/2 oz. plums
1 tbsp. honey
1 tsp. lemon juice
1 tbsp. cornstarch
1/2 cup Plum + Rose Jam
1. Peel and cut plums into small pieces. Put them in a pan and add lemon juice and honey. Let it cook over medium heat for 20 minutes. Add in the jam. Mix the cornstarch with 2 tbsp. cold water and add to the plum mixture. Stir until the sauce thickens and comes to a low boil. Once the plum sauce is thick, set it aside to cool.
2. For the pancakes, mix all ingredients together. Add oil to a pan. Once oil is hot, put a large spoon of pancake batter into the pan and fry on one side for 3 - 5 minutes on medium heat until golden and crispy on the edges. Flip and repeat until all the batter is done.
3. Top pancakes with plum sauce. Enjoy!
