Spicy Mexican Street Corn Guac

Because mixing Mexican street corn with avocados should totally be, like, normal. As for our Raspberry Hot Sauce? Well, that just brings it all together.

1 cup charred or roasted corn, cooked and cooled
2 tbsp. sour cream
1 tbsp. fresh lime juice
1/8 cup Raspberry Hot Sauce
2 tbsp. crumbled cotija cheese
2 large avocados, mashed
1 tsp. finely minced red onion
1 clove small garlic, finely minced
2 tbsp. diced tomato
Salt and black pepper

 

1. In a medium bowl, combine corn, sour cream, lime juice, hot sauce, cotija cheese, and salt. Stir to combine. Set aside.

2. In a separate large bowl, combine mashed avocado, red onion, garlic, tomato, salt, and black pepper. Add in a little more than half of the corn mixture. Transfer to a serving bowl.

3. Spoon the remaining corn mixture on top of the guacamole. Sprinkle with additional cotija cheese and drizzle with more hot sauce. Enjoy immediately!
