Spicy Papaya Ramen Bowl

1 tsp. sesame oil
1 tsp. olive oil
2 cloves garlic, minced
2 tsp. fresh ginger, minced
1/2 cup shredded carrots
1/2 cup mushrooms, sliced
4 cups vegetable broth
1 tbsp. rice vinegar
3 tbsp. soy sauce
5 tbsp. Papaya Hot Sauce

1. Heat sesame oil and olive oil in a saucepan over medium heat. Add garlic and ginger, and simmer for about 2-3 minutes.
2. Add the carrots and mushrooms, and simmer about a minute, stirring frequently.
3. Add the broth, rice vinegar, soy sauce, and hot sauce. Stir, and bring to a simmer.
4. While the broth simmers, cook the ramen noodles in a separate pot as per the package's instructions. Once the noodles are ready, drain and rinse under cool water, place into a soup bowl, and set aside.
5. When the broth is ready, spoon it over the noodles. Add your toppings and enjoy!
