Chocolate Jam Thumbprint Cookies

Strawberry Chipotle Chocolate Thumbprint Cookies

A classic jam flavor with our chili pepper twist takes these holiday classic cookies to a new level.

1 ½ cups (3 sticks) unsalted butter; softened
1 cup sugar
1 teaspoon pure vanilla extract
3 ½ cups all-purpose flour
⅓ cup cocoa powder
¼ teaspoon salt
1 egg (beaten) + 1 tablespoon water for egg wash

1. Preheat oven to 350 degrees F.

2. In a mixer, cream together the butter and sugar until just combined, then add vanilla. Separately, sift together the flour, cocoa powder and salt. With the mixer on low speed, add the flour mixture to the butter and sugar. Mix until the dough starts to come together. Dump dough onto a floured surface and roll together into a flat disk; wrap in plastic and chill for 30 minutes.

3. Roll the dough into 1 ¼ inch balls (you can also use a cookie scoop to give a consistent size). Dip each ball into the egg wash and place on a parchment lined baking sheet. Press an indentation into the top of each ball using your thumb or teaspoon and drop ¼ teaspoon of jam into each indentation.

4. Bake for 20-25 minutes.
