Stuffed French Toast

Serves 1-2
Blackberry Mulled Merlot Jam, enough to coat one side of the bread
4 slices of thick wheat bread
Whipped plain cream cheese, enough to coat one side of the bread
1 tsp. cinnamon
3 eggs
1 tbsp. vanilla extract
1 tsp. granulated sugar
3/4 cup of milk
1. Combine cinnamon, eggs, vanilla extract, milk, and sugar into a bowl. Whisk together until smooth and fully combined. Set that to the side.
2. Take your pieces of bread and smear one side with jam, and the other with cream cheese. Make a sandwich by combining the slices. Please be careful as you do this, as it can get messy fast. You also want the bread to stay in the same shape, so handle with care.
3. Whisk your liquid mixture again before gently setting the sandwich into it to get fully coated. Refrain for getting it overly soggy. Then immediately set the sandwich on a buttered skillet to cook. Flip it to cook on both sides. During this step the jam and cheese may start to leak out a bit. No need to worry. Plate your french toast, and top with whipped cream and fresh blackberries. Sprinkled a little cinnamon on top to serve.
