Sweet Potato + Pumpkin Cake w/ Cranberry Jam Glaze
It's alllll the flavors of this festive season in one sweet, spice-filled, and simple to make cake. The secret ingredient? Our Sweet Potato Biscuit Mix!

For the cake:
1 1/2 cup Sweet Potato Biscuit Mix
1/2 cup all-purpose flour
1/2 cup all-natural sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
2 tsp. pumpkin pie spice
1 cup almond milk
1 1/2 cup pumpkin puree
1 tsp. vanilla extract
For the glaze:
1 cup powdered sugar
Pinch of salt
1/3 cup almond milk
2 heavy tbsp. Cranberry Raspberry Sage Jam
Sliced walnuts, dried cranberries + orange sprinkles, for garnish
1. Pre-heat oven to 350 F and brush a bundt pan with oil.
2. Whisk together biscuit mix, flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
3. In another bowl, mix together milk, pumpkin puree, and vanilla extract.
4. Combine wet and dry mixtures and stir well.
5. Transfer to bundt pan and bake in the oven for 30 to 35 minutes or until a toothpick inserted comes out clean.
6. While cake is baking, make the glaze: Combine powdered sugar and a pinch of salt. Add milk and whisk until combined. Add jam and whisk again until smooth.
7. Drizzle glaze over cake. Garnish with toppings. Slice, serve, and enjoy!
